Recipe: High-Protein Chai-Spiced Cake (Low Carb)

Warm and flavorful, this chai-spiced protein cake is a cozy dessert or snack with a soft, lightly spiced crumb that feels like a treat but fits into a healthy baking (low-carb, high-protein) plan. This is a weight loss recipe that satisfies; it’s gently sweet and satisfying IRL (a “guilt-free indulgence” per my SEO optimizer).

Recipe

Ingredients

Dry Ingredients:

  • 1 3/4 cups almond flour
  • 1 cup vanilla protein powder
  • 3 tbsp ground flax seed
  • 4 tsp chai powder
  • 2 tsp vanilla powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp chia seeds
  • ¼ cups Walnuts
  • Wet Ingredients:
  • 4 large eggs
  • 3 tbsp melted coconut oil
  • 1/3 cup unsweetened almond milk
  • 1 apple, grated
  • 1 tsp lemon juice
  • 1 tsp grated fresh ginger
  • Orange zest

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a loaf pan with coconut oil and coat it with almond flour to prevent sticking.
  3. In a large bowl, whisk together all dry ingredients.
  4. In a separate bowl, beat eggs, then add coconut oil, almond milk, apple, and lemon juice. Mix well.
  5. Gradually combine wet and dry ingredients, stirring until smooth. Fold in walnuts.
  6. Pour batter into the loaf pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool before slicing and serving.

That baking soda/lemon juice reaction happens very quickly; mix it up and get it into the pan right away. Then let it sit a minute. You will notice a bit of a rise; This helps with the fluffiness.

When you mix the dry ingredients you should smell the spices. This is about getting the cake to tastes like something without sugar. I add lots of spices but there is an upper limit – too many can be bitter. The zest and the grated ginger help too to add flavor with no calories.

Review from the peanut gallery was “I’d rather eat an apple” [eye roll]. But that is coming from someone who can eat normal cake and . If its this, or no cake, I’ll take this.
