Ingredients

  • 1 ¼ cup chickpea flour 
  • ½ tsp baking powder
  • ½ tsp chili powder 
  • 1 tsp Herbs de Provence
  • ¼ tsp salt
  • 1 tbsp Nutritional yeast
  • ¼ cup Ground Flax seeds
  • ¾ cup Cottage Cheese
  • ½ teaspoon apple cider vinegar
  • 4 egg whites
  • 1 whole egg
  • 1 tbsp chia seeds
  • 1 tbsp olive oil 
  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 8×4” loaf pan with parchment.
  2. In a large bowl, combine: Chickpea flour, flaxseed, baking powder, chili powder, Herbs de Provence, and salt.
  3. In another bowl, whisk together: Cottage cheese, egg whites, whole egg, olive oil, apple cider vinegar, nutritional yeast, and chia seeds.
  4. Combine wet and dry ingredients until well mixed. Fold in shredded Parmesan and cheddar.
  5. Spread batter into the loaf pan (should be thick but spreadable).
  6. Bake for 35–40 min or until golden and a toothpick comes out clean.
  7. Cool 10 minutes in pan, then finish cooling on a wire rack before slicing.
