Recipe
Ingredients
- 1 ¼ cup chickpea flour
- ½ tsp baking powder
- ½ tsp chili powder
- 1 tsp Herbs de Provence
- ¼ tsp salt
- 1 tbsp Nutritional yeast
- ¼ cup Ground Flax seeds
- ¾ cup Cottage Cheese
- ½ teaspoon apple cider vinegar
- 4 egg whites
- 1 whole egg
- 1 tbsp chia seeds
- 1 tbsp olive oil
- ½ cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C). Grease a 8×4” loaf pan with parchment.
- In a large bowl, combine: Chickpea flour, flaxseed, baking powder, chili powder, Herbs de Provence, and salt.
- In another bowl, whisk together: Cottage cheese, egg whites, whole egg, olive oil, apple cider vinegar, nutritional yeast, and chia seeds.
- Combine wet and dry ingredients until well mixed. Fold in shredded Parmesan and cheddar.
- Spread batter into the loaf pan (should be thick but spreadable).
- Bake for 35–40 min or until golden and a toothpick comes out clean.
- Cool 10 minutes in pan, then finish cooling on a wire rack before slicing.
