Ingredients
- 1 cup cooked black-eyed peas
- 1 ½ cups mushrooms, finely chopped
- ½ cup low-fat cottage cheese
- ¼ cup almond flour
- 3 tbsp unflavored whey protein powder
- ¼ cup finely chopped walnuts
- 2 large eggs, lightly beaten
- 1 tsp soy sauce
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp black pepper
- ¼ tsp salt (adjust to taste)
- 2 tbsp olive oil (for sautéing)
Instructions
- Toast and chop the walnuts.
- Sauté mushrooms in olive oil with garlic/onion if desired, let cool.
- Mash black-eyed peas until mostly smooth.
- Combine everything in a bowl, including whey protein, almond flour, cottage cheese, walnuts, and seasonings.
- Mix in eggs until it holds together.
- Shape into meatballs.
- Bake at 375°F for ~20–25 minutes or pan-fry until golden and cooked through.
