Recipe: Butter Lettuce with Fancy Tuna, Almonds and Queso

Remarkably satisfying, for a salad

Ingredients

  • 1 head butter lettuce, gently torn into bite-sized pieces (about 4 cups)
  • 1 jar (5 oz) high-quality jarred tuna in olive oil, drained and flaked
  • 1/4 cup sliced almonds, toasted until golden
  • 2 oz queso blanco
  • 1 tbsp fresh lemon juice
  • 1 avocado
  • ½ cup chickpeas
  • 2 tbsp extra virgin olive oil
  • 1 tablespoon dijon mustard
  • Zest of 1/2 lemon
  • Salt & freshly ground black pepper, to taste

Instructions

  1. Make the dressing: In a small bowl or jar, whisk together lemon juice, olive oil, lemon zest, mustard, a pinch of salt, and black pepper. Taste and adjust acidity/salt to your liking.
  2. Assemble the salad:  In a large bowl, combine the butter lettuce, tuna, toasted almonds, sliced avocado, and crumbled queso.
  3. Dress and toss: Pour dressing over the salad right before serving and gently toss to coat everything evenly.
  4. Serve:  Plate and top with a few extra almond slices and queso crumbles.

Don’t skip toasting the almonds, makes a huge difference with texture and flavor and takes only a few min.
