Remarkably satisfying, for a salad
Recipe
Ingredients
- 1 head butter lettuce, gently torn into bite-sized pieces (about 4 cups)
- 1 jar (5 oz) high-quality jarred tuna in olive oil, drained and flaked
- 1/4 cup sliced almonds, toasted until golden
- 2 oz queso blanco
- 1 tbsp fresh lemon juice
- 1 avocado
- ½ cup chickpeas
- 2 tbsp extra virgin olive oil
- 1 tablespoon dijon mustard
- Zest of 1/2 lemon
- Salt & freshly ground black pepper, to taste
Instructions
- Make the dressing: In a small bowl or jar, whisk together lemon juice, olive oil, lemon zest, mustard, a pinch of salt, and black pepper. Taste and adjust acidity/salt to your liking.
- Assemble the salad: In a large bowl, combine the butter lettuce, tuna, toasted almonds, sliced avocado, and crumbled queso.
- Dress and toss: Pour dressing over the salad right before serving and gently toss to coat everything evenly.
- Serve: Plate and top with a few extra almond slices and queso crumbles.
