Ingredients (Crust)

  • 3/4 cup almond flour
  • 2 tbsp melted butter or coconut oil
  • 2 tbsp egg white
  • Pinch salt
  • 1/2 tsp vanilla

Ingredients (Filling)

  • 1 1/2 cups nonfat Greek yogurt
  • 1 cup cottage cheese
  • 4 oz cream cheese
  • 3 large eggs
  • 3 egg whites
  • 1/2 cup vanilla protein powder 
  • 3 tbsp honey
  • Zest of 1 lemon
  • 3 tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 tbsp vanilla powder
  • Pinch salt
  • 2 tsp cornstarch

Instructions

  1. Mix crust ingredients into a slightly damp, packable mixture
  2. Press firmly into pan (bottom + slight sides)
  3. Bake at 350°F for 10–12 min until lightly golden
  4. Cool before filling
  5. For filling: Blend cottage cheese until completely smooth
  6. Add everything else and blend until silky 
  7. Pour into cooled crust
  8. Bake at 325°F for 45–55 min
    • edges set
    • center slightly jiggly
  9. Turn oven off, crack door, cool slowly
  10. Refrigerate at least 4–6 hours (overnight is better)
  11. Serve with a dollop of whipped cream (about 2 tbsp) on top of each slice
