Recipe
Ingredients (Crust)
- 3/4 cup almond flour
- 2 tbsp melted butter or coconut oil
- 2 tbsp egg white
- Pinch salt
- 1/2 tsp vanilla
Ingredients (Filling)
- 1 1/2 cups nonfat Greek yogurt
- 1 cup cottage cheese
- 4 oz cream cheese
- 3 large eggs
- 3 egg whites
- 1/2 cup vanilla protein powder
- 3 tbsp honey
- Zest of 1 lemon
- 3 tbsp lemon juice
- 2 tsp vanilla extract
- 1 tbsp vanilla powder
- Pinch salt
- 2 tsp cornstarch
Instructions
- Mix crust ingredients into a slightly damp, packable mixture
- Press firmly into pan (bottom + slight sides)
- Bake at 350°F for 10–12 min until lightly golden
- Cool before filling
- For filling: Blend cottage cheese until completely smooth
- Add everything else and blend until silky
- Pour into cooled crust
- Bake at 325°F for 45–55 min

- Turn oven off, crack door, cool slowly
- Refrigerate at least 4–6 hours (overnight is better)
- Serve with a dollop of whipped cream (about 2 tbsp) on top of each slice
