Ingredients
- 1 cup plain Greek yogurt (0%)
- 2 eggs
- 4 tbsp egg whites
- 2 tbsp cream
- 1 tbsp oil
- 1 tbsp maple syrup
- 1 tsp lemon extract
- 1 tbsp fresh lemon juice
- Zest of 1 lemon
- 1/3 cup all-purpose flour
- 1/3 cup almond flour
- 1/3 cup vanilla whey protein powder
- 2 tbsp hemp hearts
- 1 tbsp chia seeds
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan.
- Whisk all wet ingredients until fully smooth.
- In a separate bowl, mix all dry ingredients.
- Gently combine wet + dry (do not overmix).
- Let batter rest 5–10 minutes (important for chia + flour hydration).
- Bake 40–50 minutes, until golden and set in the center.
- Cool completely before slicing.
