High-Protein Lemon Loaf That Actually Tastes Like Cake (Not Dry, Not Weird).

Recipe

Ingredients

  • 1 cup plain Greek yogurt (0%)
  • 2 eggs
  • 4 tbsp egg whites
  • 2 tbsp cream
  • 1 tbsp oil
  • 1 tbsp maple syrup
  • 1 tsp lemon extract
  • 1 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1/3 cup all-purpose flour
  • 1/3 cup almond flour
  • 1/3 cup vanilla whey protein powder
  • 2 tbsp hemp hearts
  • 1 tbsp chia seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan.
  2. Whisk all wet ingredients until fully smooth.
  3. In a separate bowl, mix all dry ingredients.
  4. Gently combine wet + dry (do not overmix).
  5. Let batter rest 5–10 minutes (important for chia + flour hydration).
  6. Bake 40–50 minutes, until golden and set in the center.
  7. Cool completely before slicing.
